Protein Fuel Bowl

Ingredients

    •    4–5 oz grilled chicken breast

    •    ½ cup quinoa, cooked

    •    ½ cup roasted sweet potato, cubed

    •    ½ avocado, sliced

    •    ½ cup cherry tomatoes

    •    1 cup baby spinach

Lemon Garlic Dressing

    •    1 tbsp olive oil

    •    1 tbsp lemon juice

    •    1 tsp Dijon mustard

    •    1 small garlic clove, minced

    •    pinch salt & pepper

Instructions

1️⃣ Place spinach and quinoa in a bowl.

2️⃣ Add grilled chicken, roasted sweet potatoes, avocado and tomatoes.

3️⃣ Whisk dressing ingredients together.

4️⃣ Drizzle dressing over the bowl.
