Mediterranean Power Bowl

Ingredients

    •    1 cup chickpeas (drained and rinsed)

    •    ½ cup cucumber, diced

    •    ½ cup cherry tomatoes, halved

    •    ¼ cup feta cheese, crumbled

    •    ½ avocado, sliced

    •    1 cup baby spinach or arugula

    •    1 tbsp olive oil

    •    1 tbsp fresh lemon juice

    •    ½ tsp dried oregano

    •    salt & pepper to taste

Instructions

1️⃣ Place spinach or arugula in the bottom of a bowl.

2️⃣ Add chickpeas, cucumber, tomatoes, feta, and avocado.

3️⃣ In a small bowl mix olive oil, lemon juice, oregano, salt and pepper.

4️⃣ Drizzle dressing over the bowl and gently toss before eating.
